Introduction

Number of Servings: 8

Ingredients

    2lbs of chicken breast with bone in
    10 oz can tomatoes with diced green chilies
    *onion powder (to taste)
    *garlic powder (to taste)
    * ground oregano and ground basil (to taste)
    * ground turmeric (to taste -Optional)
    I medium dried bay leaf

    * freshly chopped herbs and onion and garlic can be used instead

Directions

Wash chicken and pat dry
Season back and front of chicken breast with listed seasonings
Place bay leaf between to chicken breast (can remove after cooking if desired)
Pour tomatoes with diced green chilies over and around chicken (I also spoon a little under)
Cover wit aluminum foil
Place in oven and bake at 325-350 approximately 60- 90 minutes until chicken in tender and juicy. NOTE I turn them over at least halfway through to make sure both sides get well seasoned and tender
When chicken is done, flip breast up and broil top. (Note can do a quick broil of back side (bone side) if desired)
