Introduction

Ingredients

8 slices Rye Bread, cut in small cubes
1 - 10 oz can of corned beef
1- 15 oz can of sauerkraut
1 -16 oz container of reduced fat sour cream
1 onion, chopped
2 cups shredded Monterey Jack cheese
2 cups shredded Swiss cheese
6 Tbsp butter, melted
Directions
Cut bread slices into small cubes. Place 1/2 of the cubes in the bottom of a 9 x 13 baking pan and save the other half until later.
Crumble the corned beef over the bread cubes and top with the sauerkraut. Sprinkle with the chopped onion.
Spread the sour cream over the above ingredients and then add the cheese over the top of the sour cream.
Put the saved bread cubes on the top and drizzle them with the melted butter.
Bake at 350 degrees for 30 minutes or until bread cubes are crisp and casserole is bubbly.
Cut in 12 pieces.
