Ingredients

    3 Tb. butter
    3 C. sliced leeks
    3 Tb. flour
    2 qt. vegetable broth or boullion
    4 C. chopped potatoes
    2-3 Tb. fresh parsley, minced
    1 10-oz. bag fresh spinach

Tips

Other vegetables also work well in this hearty soup.


Directions

Saute the leeks in the butter until soft. Add the flour and stir until the leeks are coated. Slowly stir in the vegetable broth and cook until slightly thickened. Add the potatoes and cook about 40 munites or until the potatoes are very soft. Stir in the parsley and spinach and cook a few minutes more.
