Introduction

Ingredients

    2 tsp extra virgin olive oil
    1 large leek, white and light green parts only, washed and thinly sliced
    3/4 cups thinly sliced carrots
    1 clove garlic-minced
    14 cp dry white wine
    1 1/2 Tbsp all purpose flour
    1/4 tsp dried sage
    1 cp reduced sodium chicken broth
    1 cp diced chicken
    1/2 frozen peas
    salt and pepper to taste
    3/4 cp mashed potatoes prepared

Directions

Preheat oven to 425. heat oil in skillet add leeks carrots and cook stir until soft about 7 minutes. add garlic, cook and stir 1 minute. pour in wine stir until most of liquid evaporated. Add flour, sage cook and stir constantly till flour is light brown 2 minutes stir in broth bring to simmer, stir constantly until thick 5 minutes, add chicken and peas season transfer mixture to pie pan or dish. Spread the mashed potatoes on top of the mixture bake 25 to 30 minutes
