Ingredients

    Ingredients:

    *Chicken Stock, Rachel Ray, 6 oz
    Pink Salmon (canned), 4 oz
    Coconut Oil, 1 tbsp
    *Onion - Yellow - 2 Tbls.
    *bell pepper, red , 1 tbsp diced
    Celery, raw, 1 tbsp diced
    Carrots, raw 1 tbsp diced
    *Average Roma Tomato, Diced
    Spinach, fresh, .5 cup
    Dill weed, dried, .125 tsp
    Salt & Pepper to taste

Directions

Saute onion, pepper, celery, carrot in oil. Add chicken stock & quinoa. Cook until almost done. Add chopped spinach & tomato. Continue to cook until spinach is wilted.
