Introduction

Very flavourful as a side dish with fish. Very flavourful as a side dish with fish.
Number of Servings: 4

Ingredients

    6 mushrooms diced
    1/4 onion chopped
    2 gloves of garlic diced
    2 tablespoons unsalted butter
    1 cup brown rice
    2 cups chicken stock
    1 tbsp. parsley, dried
    salt and pepper to taste

Tips

Can use a mixture of mushrooms; green onion can replace regular onion.


Directions

Take butter and melt in a pot
Add mushrooms, onions and garlic
Stir/cook until mushrooms release all their juices
Add rice, chicken stock, mix
Add parsley, salt and pepper
Bring to a boil, then turn down to simmer
Place lid on pot and let cook for 20-30 minutes.
