Ingredients

    3 3/4 c. barley flour
    1 c. dry skim milk powder
    3 tsp. baking powder
    2 tsp. baking soda
    1 tsp. salt
    3/4 tsp. stevia (equal to 3/4 c. sugar)

    2/3 c. skim milk (liquid)
    1/2 c. honey
    3 c. mashed bananas (6-7 medium)
    1/2 c. canola oil
    3 large eggs
    1 tsp. vanilla extract

    1 c. chopped walnuts

Directions

Makes ≈30 muffins (2.5 dozen)

Combine all dry ingredients in a large bowl.

Add all wet ingredients to a blender and blend until smooth.

Stir wet and dry ingredients together until almost mixed; add nuts. Stir until just mixed.

Scoop into muffin pans; bake at 350ºF for 20 to 23 minutes.
