Ingredients

1 cup whole wheat flour
1/2 cup all purpose wheat flour
1/2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 cup fat free milk
1 Tblsp lemon juice
1 egg beaten
2 Tblsp olive oil
1 apple peeled and sliced
2 tsp cinnamon
1 Tbls splenda
Directions
makes 7 servings. 2 pancakes per serving
Mix milk and lemon juice in large 4 cup measuring cup.
Mix cinnamon and splenda together and sprinkle over apples.
In a large bowl stir together remaining dry ingredients.
Add egg and 2 teaspoons of the olive oil to the milk mixture which should be thick. Lemon juice makes it sour and thick. Whisk together till well mixed.
Add to the flour mix and stir lightly and quickly. Leave it lumpy.
Stir in apple mix.
Use a 1/4 cup of the batter for each pancake.
Heat 1 tsp of the oil in large fry pan & cook three pancakes at a time. Turn when griddlecakes are bubbly and look dry around the edges.
Serve with or with our syrup and butter.
Syrup and butter have not been used in the calorie count for this recipe.
Good just with applesauce as well.
