Ingredients

    Chicken Breast (cooked), no skin, roasted, 10 ounces
    Swanson Chicken Broth 99% Fat Free, 6 cup
    Carrots, raw, 1 cup, chopped
    Scallions, raw, 7 medium
    Garlic, 1 clove
    Celery, raw, 2 stalk, large
    *Extra Virgin Olive Oil, 2 tbsp
    Mrs. Dash (R) Garlic & Herb Seasoning Blend, 0.5 tsp
    * Barilla Whole Wheat Penne Pasta, 4 serving
    Water (about 4 cups)
    Various seasonings (thyme, rosemary, italian, sazon) to taste

Tips

This is a basic recipe. I have experimented with adding spinach after the entire thing has cooked, mixed veggies, rice instead of pasta and it has always come out excellent.


Directions

Place oil in large pot. Cut carrots, scallions, garlic, and celery. Saute in oil for about 30 sec-1 min. Add chicken broth and water, boil for about 10 min. While boiling cook chicken and dice or simply dice already cooked chicken. Dump chicken in pot. Cook another 10 min on medium. Add pasta. After about 7 min, turn fire off as pasta will sit and become completely softened in broth.

Serving Size: Makes at least 12 coffee mug size servings
