Ingredients

    1-2 cups water
    1 large head cauliflower
    skim milk to cover (about 3 cups)
    1/4 tsp kosher salt (or to taste)'=
    fresh ground black pepper to taste

Tips

sprinkle 1 serving (30g) grated cheddar cheese in bowl of hot soup if desired


Directions

roughly cut cauliflower and add it to crockpot with 1-2 cups water. cover and cook on low 4-6 hours, of until cauliflower is soft and starting to brown where it touches the sides. Add milk to almost cover and puree with immersion blender until smooth. Add salt and/or pepper to taste.
