Ingredients

    1 cup Zucchini, sliced
    1 cup Yellow Summer Squash, sliced
    1 cup cooked Brown Rice
    0.25 cup cooked Lentils
    1/2 medium white onion, sliced
    1 clove garlic
    0.33 cup sweet red peppers, diced
    1 Tbsp. Grape seed Oil


Tips

Serve with grilled salmon, chicken, or omelet for brunch. Top with fresh snipped herbs-basil, parsley, sage, thyme. Brown rice pilaf is also good served cold with fresh vegetables and lite salad dressing for a vegan meal.


Directions

Steam brown rice and lentils according to package directions. Set aside. Prepare vegetables and sauté gently in grape seed oil until crisp-tender. Prepare grilled fish or meat. Add brown rice to sautéed vegetables and serve warm. Brown rice pilaf is also good served cold with fresh vegetables and lite salad dressing for a vegan meal.
