Ingredients

    2 cups black-eyed peas
    3 medium radishes, chopped
    1 large carrot, grated
    2 stalks celery, chopped julienne style
    2 large green onions, diced
    1 cup chopped Kale
    2 cups iceberg lettuce or your choice of salad greens
    4-6 artichoke hearts, drained
    Newman's lite honey mustard salad dressing on the side

Directions

Cook black-eyed peas for 25 minutes or according to package instructions. Chop, dice the raw vegetables. Add drained artichoke hearts. Mix. Serve with Newman's lite honey mustard salad dressing. Delicious!
