Ingredients

    1 pound bottom round or other stew beef (cubed)
    1 cup acorn squash (cubed)
    4 med. potatoes (cubed)
    2 med. onions (diced)
    celery, diced, about 2 cups
    2 to 2.5 cups mushrooms
    1 cup frozen peas
    1 cup frozen corn
    carrots, diced, about 2 cups
    2 packages dry beef gravy mix
    2 tsp thyme
    In addition to the ingredients above I start this recipe with 1.5 to 2 c water
    Add all ingredients
    You can use any stew beef; it needs some fat to cook so don't use a leaner cut.
    I use 2 packages of dry beef soup mix
    Cook on low for 6 to 8 hours
    The thyme adds a nice flavor

Tips

While this is not low-fat, it is a one dish meal so having dinner at 500 calories works for my spark plan. Also, the serving size is very generous, due to the number of veggies in this dish! With potatoes and winter squash this is a wonderful, filling winter dish.


Directions

Add all ingredients to your slow cooker
Cook on low 6 to 8 hours
