Ingredients
1 lb Eckrich Skinless Turkey Smoked Sausage
3/4 cup onion chopped
1 TBSP Garlic, diced
1 tsp Crushed Red Pepper Flakes
2 TBSP Extra Virgin Olive Oil
1 15 oz can Pumpkin (NOT pumpkin pie filling)
1 cup Chicken Broth
1 tsp Sage, ground
1 box Ancient Harvest Quinoa Pasta cooked
1 TBSP Parsley, dried
1/2 cup Parmesan Cheese, grated
Directions

Cook sausage in skillet until browned, remove from pan and set aside.
Add onion, garlic, olive oil to pan and cook until onion is translucent. Add pumpkin and chicken broth. Bring to a boil then reduce to a simmer for 5 minutes until sauce is thickened slightly. Mix in sage, cooked pasta, cooked sausage (from before) and parsley, toss to coat. Spray 8 ramekins with cooking spray and divide pasta mixture evenly between them. Sprinkle Parmesan on top Bake at 375 for 35 minutes or until top has browned.
