Ingredients

    Small Red Beans, 1 lb dry
    Black Beans, 1 lb dry
    1 raw onion
    1/2 clove fresh garlic
    1 TBSP Himalayan Salt
    12 -14 cups water ( more during cooking process if needed)

Tips

Healthy option to cheese or sour cream - use 100% fat free plain Greek yogurt.
Healthy option to rice, chips, tortillas: mix in plain ( no flavor) cooked Quinoa.


Directions

Choose your favorite method to cook dry beans. I choose the overnight method. After rinsing the beans and soaking them overnight, in clear water I combine ingredients, bring the mix to a rolling boil then lower and simmer with lid off for 2 hours.
