Ingredients

    6 cups baby spinach
    1 med. gala apple, cored and chopped into 1 inch chunks
    1 med. Granny Smith apple, cored & chopped 1" chunks
    1 cup walnuts, roughly chopped
    1/3 cup crumbled feta cheese
    1/3 cup dried cranraisins

    Dressing
    1 cup apple juice
    4 Tbsp. apple cider vinegar
    2 Tbsp. honey
    1/4 tsp. salt
    1/4 tsp. ground black pepper
    1/4 cup extra light olive oil

Directions

Core and chop apples (thin slices or 1 inch chunks). Toss lettuce, apples, walnuts, feta, and cranberries together in a large bowl.
Whisk together all dressing ingredients. Toss with salad immediately before serving. Enjoy!
