Ingredients

    olive oil, 1 tsp
    Turkey (light meat), 2 cup, chopped or diced
    Celery, raw, 1 stalk, large, chopped
    Garlic, 1 clove, diced
    Diced Green Chili Peppers, canned, 4 oz
    Broth, chicken, fat free, 3 cups
    Sweet Corn, Fresh, 1.25 cup
    *Flour, white, .25 cup
    Milk, nonfat, 2 cup
    Velveeta Sharp Cheddar Cheese Slices, 2 sliced
    green onion, one stalk, bulb chopped separate from green part
    Pepper, red or cayenne, .25 tsp
    salt & pepper to taste

Directions

Heat olive oil in bottom of soup or stock pan. Cook onion, celery and garlic about 5 minutes. Add green chilis and cook another minute. Stir in broth and corn, bring to a boil, reduce heat and simmer for 10 minutes.

Separately, stir together milk and flour. Whisk into the soup, along with salt and pepper.

Stir in turkey, cheese slices & cayenne pepper and heat until cheese melts.
