Introduction

4 Medium Potatoes
1/2 Cup of cooked Carrots
1/4 Cup of Cottage Cheese 2%
1/4 Cup shredded Cheddar Cheese
1/4 Cup plain Yogurt
4 Tsp minced Garlic

Number of Servings: 4

Ingredients

    4 Medium Cooked Potatoes; peeled & boiled
    1/2 Cup of cooked Carrots; cooked & cut up
    Mash Potatoes and Carrots very well.

    Blend in:
    1/4 Cup of Cottage Cheese 2%
    1/4 Cup shredded Cheddar Cheese
    1/4 Cup plain Yogurt
    4 Tsp minced Garlic


Tips

Cook Potatoes and Carrots ahead of time. Reheat in microwave and blend in other ingredients.


Directions

Because of the mashing / blending, dish may have to be re-heated before cheeses and yogurt are added. Worth the extra effort though - delicious.
