Ingredients

    1 red onion, thinly sliced
    1/2 cup white wine vinegar
    1/4 cup sugar
    1 tsp salt
    1 cinnamon stick
    6-8 whole black peppercorns

Directions

Slice onion thinly and place in bowl. Mix all other ingredients in a saucepan and heat until boiling. Pour over onion slices and refrigerate overnight.

Serving Size: Makes 12 servings to add to sandwiches or salads
