Introduction

This is a revamped version of an old family recipe that removes all the added sugar, reduces fat by more than 50%, and swaps out graham cracker crust for a very tasty nut/raisin/cinnamon crust that my family favors over graham cracker crust. 8 grams protein for less than 300 calories qualifies as a great snack or the protein portion of a meal. Ingredients

    CRUST
    1 c. Nuts, any kind, soaked, rinsed and drained
    3/4 c. Raisins, soaked and drained
    1 t. Cinnamon

    FILLING
    4 8-ounce pkgs lite cream cheese
    1/2 c. Truvia
    6 eggs
    2 Tablespoons vanilla extract

    TOPPING
    16 ounces lite sour cream
    4 Tablespoons truvia
    1 Tablespoon vanilla extract

Tips

I use pecans, walnuts or almonds, but any nut will work.

Individual servings can be frozen for portion controlled meals or snacks.


Directions

1. CRUST: Mix nuts, raisins and cinnamon in food processor until well mixed and forming a soft ball. Pat firmly into the bottom of a spring form pan, or a 9x13 pan.

2. FILLING: Mix cheese and truvia together. Add eggs and vanilla. Pour on top of nut crust and bake 350 degrees 1 hour.

3. Remove from oven and let stand 15 minutes. The top of the crust will even itself out (leave it alone ;)

4. Increase oven heat to 425 degrees.

5. TOPPING: Mix sour cream 4 Tablespoons truvia and 1 Tablespoon vanilla extract together until it is well mixed and smooth.

6. Spread sour cream mixture on top of cheesecake and bake at 475 degrees 15 minutes.

7. Let cheesecake cool before slicing. Slice into 16 servings.

8. Store in refrigerator after cooled.
