Introduction

I liked the idea of the protein muffins. And the microwave muffins, but I wasn't finding any that were also high in fiber, too. I liked the idea of the protein muffins. And the microwave muffins, but I wasn't finding any that were also high in fiber, too.

Ingredients

1 medium banana (about 1/4 cup mashed)
    1 egg
1 scoop EAS Chocolate Soy Protein Powder
    2 Tbsp PB2 with chocolate
1 Tbsp Linwood's Milled Flax, Sunflower, Pumpkin, and Sesame Seeds, Goji Berries (could also just use ground flax)
    1 Tbsp rice bran
    1 1/2 Tbsp Chia seeds
    1/4 cup dry instant oatmeal
    1 tsp cinnamon

Tips

I actually mixed and baked mine in a Pyrex 2 cup measuring cup and just saved half for the next day.

If you would prefer more of a thick oatmeal, stop cooking after about 30 seconds.

Directions

Mash the banana and whisk in the egg with a fork. Mix in each of the ingredients as you add them. The result will be very moist, but somewhat stiff. Divide into two mugs (put one in the fridge to "bake" tomorrow). Microwave for 45-60 seconds checking frequently after 40 seconds. Let stand 2 minutes. Result will be moist and a bit crumbly, so I eat mine with a fork right out of the mug.

Serving Size: makes two half cup size muffins
