Introduction

Number of Servings: 8

Ingredients

    2 cups fresh greens (kale, collard) - stems removed and roughly chopped
    1 medium yellow onion, chopped
    1/2 Tbsp extra virgin olive oil
    4 cups roast turkey meat, cubed
    1 can (15 oz) white kidney (cannellini) beans
    4 cups chicken broth or stock
    2 Tbsp lemon juice
    1 tsp ground turmeric
    1/2 tsp dried thyme (or 1 tsp fresh thyme)
    salt and pepper to taste

Directions

Bring large pot of water to a boil. Drop the chopped greens into the boiling water and blanch for 5 minutes. Drain greens into colander. Put pot back on stove and add olive oil. Saute onions in olive oil until the onions become translucent, then add greens back to pot.

Add remaining ingredients and cook over medium heat until hot.

Serving Size: Makes 8 1-cup servings
