Ingredients

    1 head cauliflower
    4 oz. low fat cream cheese (do not use fat free)
    4 oz. low fat sour cream (do not use fat free)
    1 medium onion, chopped
    1/4 cup Parmesan cheese
    1 lb ground beef
    1 cup reduced fat sharp cheddar cheese

Directions

Brown ground beef, add onions, season to taste with black pepper, garlic powder, and seasoned salt. Preheat oven to 350F. Cut out stem and core from cauliflower, and cut into small pieces. Cook in large pot of boiling water until cauliflower is tender, but not overly soft. Drain well and mash with potato masher, leaving some chunks. Mix in light cream cheese, light sour cream, onion, Parmesan, and ground beef.

Spread evenly in a medium-sized glass casserole dish. Sprinkle with low-fat cheddar cheese. Bake 35-45 minutes, or until hot and bubbly.

Serving Size: Makes about 6 1C servings.
