Introduction

Blacken chicken with a real kick! Before starting remove any smoke detectors, open any doors if possible and turn on kitchen fan.!
I normally make up the spice mixture and then only put into a dish what I need to cook a couple of chicken breasts at a time.

Ingredients

    30 ounces of chicken (5 chicken breasts)
    Pam spray

    Spice Mixture
    3 Tbsp smoked paprika
    3 Tbsp sweet paprika
    1 Tbsp cayenne pepper
    1 Tbsp onion powder
    1 Tbsp garlic powder
    1 Tbsp chipolte chile
    1 tsp dried oregano
    1 tsp dried thyme
    1 dash salt
    1 tsp cumin
    1/2 tsp white pepper

Directions

1 - Mix spice mixture together
2 - Put enough spice mixture into a flat bowl to coat both sides of the chicken. Save rest in tight container for next time.
3 - Preheat oven to 350 degrees
4 - Heat a cast iron skillet over high heat for 5minutes until it is smoking hot.
5 - Take 2 chicken breasts slice in 1/2 horizontally -- makes it cook faster and get more of the blacken taste.
6 - Spray both sides of chicken with Pam
7 - Dredge chicken in spice mixture so both sides are well coated.
8 - When skillet is smoking place chicken into pan, cook for about 3-5 minutes on each side. Yes it will be smoking, that's why you want to remove smoke detectors!
9 - Place skillet into oven and finish cooking chicken for about 10 minutes.
