Ingredients

4 large Roma tomatoes
1/4 small onion
2 TBSP parsley, curly or flat-leaf
juice of 2 small lemons
salt & pepper to taste
Tips
- A mandolin is very handy for slicing the onions very thinly.
- The lemon juice mellows the bite of the onions very nicely if you are not a fan of raw onions.
Directions
1 - Rinse the tomatoes and slice them into smallish wedges.
2 - Slice the onions very thinly. It's easiest to do this using a mandolin.
3 - Rinse the parsley and then roughly chop it.
4 - Layer the tomato wedges, onion slices and parsley into a bowl.
5 - Pour or squeeze the lemon juice over the top.
6 - Let the mixture sit in the lemon juice for 10-15 minutes to allow the acidity of the juice to mellow the onions and flavor the tomatoes.
7 - Season to taste before serving.
Serving Size: makes 4 servings
