Ingredients

Extra Virgin Olive Oil, 2 tbsp
boneless, skinless chicken breast, 32 oz (salt and pepper to taste)
Garlic, 7 clove, I used 3 T minced garlic
med yellow onion, sliced
Red Bell Pepper =- 1/2 sliced
Crushed Red Pepper, 0.25 tps
White Wine, 6 fl oz
Flour, white, 1 T
Red Pack Whole Peeled Plum Tomatoes I can smashed
Chicken stock, home-prepared, .5 cup
Green Olives, 4 ozs. (recipe called for Cerignola olives - green olives are ok sub)
Tips
Follow the order of cooking steps - it's not the same if you do it all at once. It takes time but it is worth it.
Lagasse suggested serving this with Polenta (I serve with yellow rice)
Directions
Heat the oil - high but not burning not burning
Cook chicken4-5 minutes per side and remove
Add onions, peppers, crushed peppers and garlic - cook till it starts to carmelize 5-7 min.
Add wine and cook till starts to thicken 3-5min
Stir in flour - about 2-3 min
Add tomatoes and chicken stock- cook till it startsto thicken - 5 min
Return chicken to the pot and add olives
Cover and simmer 30- 40 minutes
