Introduction
I have NOT made this yet! I'm going to make it when I get a chance - so I do not know if it works yet or not! (looks good though!) I have NOT made this yet! I'm going to make it when I get a chance - so I do not know if it works yet or not! (looks good though!)Number of Servings: 40
Ingredients
-
FILLING:
2 cups dried figs
4 medjool dates, pitted
<1/4 cup pineapple juice
SHELL:
2 cups oats (or 1 cup oat flour)
1/2 cup whole wheat flour
5 medjool dates, pitted
1/4 cup dried figs
1/4 cup raisins, soaked 1 hr
1 tsp baking powder
Directions
(dried fruit may need to be soaked first)
process dates, figs, and pineapple juice to make a thick paste. Set aside and clean processor.
Process oats to make fine oat flour. Add in whole wheat flour and baking soda and process until very fine. Set in a separate bowl.
Process dates, figs, and raisins until a paste forms. Soaking and chopping the fruit may make this easier. Add in oat mixture, a little at a time, until a dough forms (should be the consistency of wet sand). Press half the dough into a 13x9 pan, top with fig-filling, then press remaining dough on top.
Bake at 325 until lightly browned (will insert time when I figure it out!)
