Ingredients

    Red Bell Pepper, 1 c. chopped
    Green Pepper, 1 c. chopped
    Onion, 1 c. chopped
    Cilantro, 1 cup chopped (the whole bunch)
    Pinto Beans, 1 c. (1 can)
    Black Beans 1 c. (1 can)
    Dark Red Kidney Beans 1 c. (1 can)
    Lima Beans 1 c. ( 1 bag of frozen limas, 12 oz.)
    Chick Peas 1 c. (1 can)
    Extra Virgin Olive Oil, 3 TBSP
    Red Wine Vinegar, 4 TBSP

Tips

Use frozen lima beans for a crunchier salad. Most frozen bags are 12 oz. I just throw them all in. The cans of beans are a little over a cup, I throw the whole can in.


Directions

Dice all vegetables. Drain and rinse all the beans, but the limas. Stir all ingredients together.

Serving Size: 9 one cup servings
