Number of Servings: 8

Ingredients

    Frozen corn(thawed & cooked before use in salsa), 1.25 cup
    Serrano Peppers, 3 peppers (diced with seeds and membranes removed)
    Red Onion Raw, diced. 1/4 cup
    Cilantro, raw, 3.5 tbsp
    Fresh lime Juice, 1 lime yields
    Salt, .5 tsp
    Stevia in the Raw, .5 serving

Tips

Leave a few seeds or some of the pepper membranes for more heat. This recipe is already slightly spicy from the peppers alone but if you like it hot feel free to try this tip.


Directions

Cook corn per package instructions then put in fridge to cool. Dice onions (or grate if you prefer but use less than 1/4 cup if so). Halve peppers and remove seeds and membranes then dice. Chop cilantro. Combine all ingredients in a glass container but add lime juice last. Stir well.

Serving Size: This makes about 8 servings
