    2 Tablespoons Olive Oil
    2 pounds chuck roast cubed into 2 inches
    1/4 cup unsweetened shredded coconut
    1 medium onion cut into 8 wedges
    4 cloves of garlic minced
    1 (12oz) can of coconut milk
    2 Tablespoons Brown sugar
    1 Tablespoon Curry powder
    1 teaspoon Cayenne pepper
    1 Tomato chopped
    1 Tablespoon ground ginger
    salt to taste


you can leave out tomato until the last 15 minutes of cooking


add oil and salt on meat and brown on all sides in a skillet on medium high for 8 minutes roughly
transfer everything into the slow cooker for 4-5 hours on high cook rice according to directions.

Serving Size: makes 6 1 and a half cup servings
