Ingredients

    1 whole chicken, cut-up
    2 roma tomatoes
    3 TBLS. Culantro (if cannot find use cilantro)
    3 Cloves of garlic
    1 Yellow onion
    3 TBLS. Ketchup
    3 TBLS. Mustard
    .25 Brown Sugar
    4 TBLS. Vegtable Oil
    1 Habanero Pepper

Tips

add more hot pepper or less depending on desired heat. best served with rice or roti (see recipe). Lower calories by suing only breast meat and low cal. ketchup and mustard.


Directions

Cut up chicken and season with chopped culantro, garlic, slices onion, tomato, diced habanero pepper, Ketchup and mustard. Heat oil in a deep pan when oil hot add sugar and let melt and brown in to a dark brown but not burnt. add chicken mix and stir. cooked covered until chicken is cooked thoroughly.
