Ingredients

2 c. Chinese steamed noodles
1/3 c cilantro, chopped
3 scallions chopped (1 for garnish)
2 T fresh ginger, minced
1 1/2 T fresh garlic
3 T + 1/2 c water
1/2 McCormick Chicken cube
2 t olive oil
2 c shredded cabbage
1 red pepper, julienned
1 yellow pepper, julienned
1 T sesame oil
3 chicken breasts, cut in thin strips
2 T soy sauce
salt and pepper to taste
1 T toasted sesame seeds
Directions
Cook the pasta according to the package directions. Drain well, transfer to a metal mixing bowl and set aside.
Combine the cilantro, 2 of the green onions, ginger, garlic and 3 T of water in small bowl. Set aside.
Heat the oil in a large skillet over medium high heat. Add the cabbage, onion, and peppers. Cook for 8 minutes until the vegetables are tender. Transfer the vegetables to the bowl with the pasta, toss and cover with a towel to retain heat.
Add the sesame oil to the skillet over medium high heat. Add the cilantro mixture and cook for about 1 minute, stirring constantly. Add the chicken strips and soy sauce and cook for 2 minutes or until the chicken is nearly done. Add the remaining 1/2 c. water and mccormicks cube and bring to a boil. Return the vegetables and noodles to the skillet and stir for 3 minutes, until heated through. Season with salt and pepper. Garnish with remaining green onion and sesame seeds.
