    1 cup of good quality flour such as 00 or enriched bread flour
    1/4 tsp salt
    1 large egg


In a bowl, combine flour and salt.

Create a well in the centre and add egg.

With a fork, whisk egg and slowly incorporate flour.

When the forming dough becomes too tough for a fork, use hands to incorporate the rest of the flour.

Turn dough onto a floured surface and knead dough.

Wrap dough in cling film for 20-30 minutes, at room temperature.

From here you may use whichever pasta-making method of your choice
