Ingredients

1/4 head green cabbage
3.5 g cucumber
168 g green bell pepper
42 g carrots
Tips
Mix up the spices. We spiced the chicken with red pepper flakes, chili powder, and tumeric. Green or red curry paste would also be tasty. Try a vinegar based dipping sauce for low calories or a peanut dipping sauce for a richer taste.
Cilantro or Thai basil makes this spectacular, but we didn't have any when making this.
Directions
Shred all veggies. A food processor makes this step easier.
Cook ground chicken (or tofu) if using. Allow to cool.
Soften spring roll wraps under warm running water for about 20 seconds. Allow to rest on your area. Fill with 2 tbs veggies and 2 tbs chicken or tofu mix.
Serving Size: Makes 20 spring rolls
