Number of Servings: 30

Ingredients

    Pork Butt (with fat trimmed) 5lbs
    Pineapple chunked, entire
    Cabbage chunked, entire
    2 Jalapeno Peppers
    Orange Juice, 1 cup
    Bay Leaf
    Corriander
    Salt
    Pepper
    Smoked Paprika

Tips

I'll be making 1 serving containers for me and double portions for my husband.


Directions

Roughly chop cabbage, onion, pineapple and spread in the bottom of a roasting pan. (I line the pan with foil) Thinly slice jalapeno and add to pan.
Sprinkle with salt, pepper, and coriander.
Trim fat from pork and place on top of fruit and veg.
Sprinkle with salt, pepper, and smoked paprika.
Add three or four bay leaves to top of pork.
Pour the OJ into the pan and close up the foil.
Roast in slow oven (200 - 250) for 5-7 hours.
No peeking. Remove when time is up.
After it rests for 20 minutes, pull the pork apart with two forks and toss everything together as evenly as possible.
Divide evenly into storage containers for freezing.


Serving Size: Makes 30 very small servings. Serve with salad!
