Ingredients

    1 c. Raw cashew pieces ½ TB orange peel.
    1 c. raw pumpkin seeds 1 Tb. cinnamon
    1 c. slivered almonds 1 tsp. vanilla extract
    1 TB. Walnut or coconut oil
    1 TB whole flax seeds
    ½ c. sugar free vanilla or hazelnut syrup
    1 TB chia seeds
    1/2 c. each, pecan halves, peanuts and walnuts
    1/4 c. raisins
    ¼ c. dried mangos, choppes
    2 cups organic or gluten free rolled oats
    1 c. unsweetened coconut flakes

Tips

You can make it gluten free by using gluten free oats in place or the organic oats


Directions

Preheat oven to 350. IN large bowl, combine the nuts, seeds, coconut and cinnamon. Add oil, vanilla and syrup and mix thoroughly till all grains and nuts are coated. Spread the mixture out on a large baking sheet in a ½” layer. Bake for about 20 minutes, or until golden, stirring every 5 mins. Once cooled, add dried fruits and orange peel. Cool and store in airtight container.

Serving Size: Makes 21 1/2 cup servings
