Number of Servings: 1

Ingredients

    1/4 c. Onions, raw chopped
    1/4 c. Celery, raw diced
    1/4 c. Carrots, raw chopped
    1/2 c. Lentils
    2 tbls. Salsa
    2 tbls. Yogurt Plain Greek Yogurt, non-fat
    2 tsp. fajita/cajun seasoning
    salt & pepper to taste

Tips

Remove lid and cook another 10 minutes to evaporate the liquid and serve as a hot dip with chips!


Directions

Place vegetables and lentils in a pan and cover with approximately 2 c. water. Add salt, pepper and seasoning. Cover and cook about 30 minutes, or until lentils are cooked to desired consistency. Dish it up and garnish with 2 tbls. of salsa and yogurt-enjoy!
