Ingredients

1/2 Cup Chicken Broth
12 Yukon Gold Baby Potatoes
2 Cups Baby Carrots, whole
2 Cups White Mushrooms, sliced
2 Cups Yellow Squash (1 - 7" long), chopped
2 Cups Red Onion (1 Medium), chopped
2 Cups Green Pepper (1 large), chopped
1 Cup Broccoli Stalks, chopped
1 tsp. Rosemary
Salt and Pepper to taste
Tips
For a lower carb meal, make without potatoes to save about 20 carbs per 1 cup serving and 10 minutes off cooking time.
Directions
In a medium-size pot add water to boil 12 potatoes cut in half or quartered, until soft, approximately 10 minutes.
Add chicken broth to frying pan and add potatoes cut side down. Then add carrots, onion, green pepper and broccoli and saute' over medium heat for 5 minutes covered. Add squash and mushrooms, stir and continue to cook until carrots and broccoli are soft, cooking covered, approximately 10 minutes.
Serving Size: Makes 12 - 1 cup servings.
