Ingredients

    2 chicken breasts, no skin
    6 corn tortillas
    1 cup low fat cheddar cheese
    2 tbsp olive oil
    1/2 tsp salt
    1 tsp black pepper
    1 tsp garlic powder
    1 tsp chili powder
    1 tsp oregano
    1 tsp paprika
    1 tsp cumin

Directions

Preheat oven to 350 degrees.
Combine all spices and seasonings in a bowl. Apply the spice rub to each chicken breast.
Heat olive oil in an oven safe pan. Brown chicken over med/med-high heat, about 3 minutes per side. Transfer pan to the oven to finish cooking chicken, about 15 minutes or until chicken is cooked through and juices run clear. Remove chicken and set aside.
Warm tortillas in a non-stick skillet over medium high heat until they just begin to brown.
Dice chicken and divide evenly on tortillas.
Top with an equal portion of cheese and your favorite hot sauce or salsa. Enjoy!
