Ingredients

16 oz frozen cauliflower & broccoli
2 tbsp butter
1 cup asparagus, diced (1" pieces)
1 cup celery, diced
4 oz white mushrooms, diced
1 cup green onion, chopped
3 5-oz can tuna, drained
8 oz cheddar cheese, shredded
1/2 cup sour cream
1/2 cup mayonnaise
salt to taste
pepper to taste
Tips
For even less carbs, use less sour cream and more mayonnaise. Use onion powder or dried onion instead of fresh green onion.
Directions
Put the frozen cauliflower and broccoli in a casserole dish. Cover and microwave on HIGH 8 minutes until very tender.
While the vegetables are in the microwave, saute the asparagus with the butter in a skillet until slightly tender. Add celery and saute until slightly tender.
Mix all of the remaining ingredients in with the cauliflower and broccoli (easier to mix in large bowl). Add the asparagus and celery. Bake at 350º for 25 minutes or until bubbly and browned on the top.
