Introduction

This is an easy recipe for this pasta dish. I used 2% milk, but 1% would be better. Low fat cream cheese was used...try fat free cream cheese, too. Using a clove of garlic, instead of the garlic powder, plus altering the butter and garlic is an idea. Use all butter or all garlic, or using half of what called for this recipe. Ingredients

    3 oz. fettuccini or any pasta you have
    1 1/2 t. olive oil
    1 t. butter
    1 clove garlic, or 1/4 tsp. garlic powder
    3 T. flour
    1/4 c. chicken broth, fat free and low sodium
    1/4 c. low fat milk
    2 T. cream cheese, low fat
    3 T. Parmesan cheese, grated
    Salt, if desired
    1/4 t. black or white pepper
    Nutmeg, dash

Directions

Boil pasta according to package directions. If using a clove of garlic saute 1 minute in olive oil and butter (may use garlic powder instead.) Sprinkle flour into skillet and cook 1 minute. Whisk in slowly milk and simmer one minute. Add cream cheese, Parmesan, salt (if desired) and black pepper. Add a dash of nutmeg if you like that flavor in alfredo sauce. Simmer until warm. Add cooked pasta and toss with sauce.

Serving Size: Makes 2 generous potions
