Ingredients

1 (14.75 oz) can of pink or red salmon, undrained (remove the bones)
1/3 cup onion, finely minced
1/4 tsp freshly cracked pepper, or to taste
1/4 tsp Cajun seasoning (like Slap Ya Mama), or to taste, optional
1/4 tsp Old Bay seasoning, or to taste, optional
1 tbsp fresh lemon zest
15 saltine crackers, crushed fine (or 1 cup breadcrumbs)
1 lg egg, beaten
1/8 cup water
Non-stick cooking spray
Tips
Serve with a garden salad and green beans.
Serve with Remoulade, Cajun mayonnaise, horseradish sauce, or ketchup.
Directions
Preheat oven to 400-degrees F.
Use a fork to gently break apart the salmon, leaving some small chunks. Add the onion, pepper, Cajun seasoning, Old Bay, parsley, and lemon zest; toss gently. Reserve and slice the lemon. Add the cracker/bread crumbs, egg, and water.
Scoop about 1/3 cup into lightly greased or sprayed muffin tins. Bake for 20-25 minutes, or until golden brown.
Allow to sit for 5 minutes and then remove patties from muffin tin.
Serve immediately.
