Ingredients

16 ounces fresh ground pork
1 cup chopped onion
2 tablespoons fish sauce
6 tablespoons fresh cilantro [at the very least!]
4 cloves garlic, minced
1 tablespoon Rooster Brand Sambal Oelek
red pepper flakes [to taste]
freshly ground lemongrass [to taste]
1 cup hot tap water
Tips
Best served with steamed vegetables and Jasmine rice with Sriracha sauce drizzed upon them. YUMMMMMM.
Directions
In a large bowl, combine all the ingredients until well incorporated. It's best to do this with your hands [I wear surgical gloves because...I just can't stand touching raw meat]. I yield about 13 2 ounce balls [yes, I weigh them].
Form into balls.
Place the balls in a covered skillet on high heat ... add the hot water immediately ... let them boil a bit..then reduce the heat to medium giving the covered pan a shake every once in a while to make sure they don't stick. They shouldn't stick.
Should be cooked in about 25 to 30 minutes. Drain the juices. Serve with steamed vegetables and Jasmine rice, if you like.
