Ingredients

    12 oz low-fat breakfast sausage
    10 corn tortillas, sliced in strips
    2 c Colby and Monterey Jack cheese
    5 eggs
    1 carton Egg Beaters, Southwestern style
    1 c Silk vanilla soy milk
    1/2 tsp Mrs. Dash

Directions

Brown and crumbles sausage. Drain on paper towel. Mix together eggs, Egg Beaters, soy milk and Mrs. Dash.

In a greased 9x13" pan, layer 1/2 tortillas strips, 1/2 cheese, 1/2 sausage. Repeat layers. Pour egg mixture over all. This can be made ahead and refrigerated overnight. Bake at 350' for 30-35 minutes. Let stand 5 minutes before serving.
