Ingredients

    Black bean taquitos
    2 cooked chicken breasts- diced
    1 can if black beans, drained and rinsed
    3 tablespoons salsa
    1 garlic clove minced
    1/2 tsp salt
    1/4 tsp black pepper
    2 1/2 tablespoons lime juice
    1 (10 ounce) box of frozen spinach- I use fresh.
    3/4 cup of frozen corn kernels
    1/2 cup diced red bell pepper
    1 cup shredded cheese
    Whole wheat tortillas.

Directions

Pre heat oven to 425*
Mix all ingredients together, minus the tortillas. Scoop out the mixture, and place in the tortillas and roll them up. Spray pan and taqitos lightly with cooking spray and bake for 20-25 minutes. Dip in salsa or homemade ranch smile emoticon
