Ingredients

    6 boneless skinless chicken breast halves
    1.5 T fresh Rosemary,
    3 cloves chopped Garlic
    1 t Pepper, black
    1/2 t Salt
    1 T Olive Oil
    4 Tbalsamic vinegar

Directions

Rinse chicken and pat dry. Combine spices in small bowl and mix well. Place chicken in large bowl, drizzle with olive oil and rub with spice mixture. Refrigerate overnight.

Preheat oven to 450 degrees. Spray heavy roasting pan with cooking spray. Place chicken on pan and roast for 10 minutes. If drippings begin to stick stir in 3-4 T of water to loosen drippings. Turn chicken over and roast an additional 10 minutes, or until a food themometer registers 160 degrees. If pan is dry, stir in another 1-2 T of water to loosen. Drizzle vinegar over chicken in pan.

Place chicken on plate. Stir liquid in pan and pour over chicken.

    I made this for dinner tonight except I used 1-lb pork tenderloin instead...it was phenomenal! Thank you for such a wonderful recipe...I can't wait to try it with chicken too :) - 4/21/08
