Introduction

Ingredients

1/2 cup plain non fat yogurt
4 large egg whites
1 teaspoon pure vanilla extract
1 cup old fashioned oats
4 teaspoons packed brown sugar, divided
2 medium apples, peeled, cored, and sliced
1/2 cup cottage cheese
Tips
You can always add cinnamon or allspice or nutmeg or whatever you fancy spice wise to this...
Directions
Grease an 8 x 6 casserole dish generously.
Preheat oven to 350 degrees.
Whip up the yogurt, egg whites, and vanilla with a stick blender until fluffy [or a wire whisk].
Add the oats and combine until well incorporated.
Place half the oat mixture on the bottom of your well greased casserole dish.
Dot the cottage cheese on top of this and gingerly spread it out with the back of a spoon or a spatula.
Top the cottage cheese with sliced apples, then top the apples with the remaining oat mixture. Top everything off with the brown sugar and bake at 350 for about 30 - 35 minutes.
Let stand for about 5 minutes after you remove from the oven. Serve warm.
This will yield 4 1 cup [ish] sized servings.
