Ingredients

    - Beans, red kidney - 2 cups dry
    - Garlic - 4 gloves chopped
    - Celery raw, 1 cup diced
    - Onion - 1 large chopped
    - Mushrooms, fresh, 4 cups sliced
    - Green Peppers - 1 large diced
    - Tomatoes - 3 cups chopped
    - Olive oil - 1 tsp
    - Potato - 1 large diced
    - cumin - 1 tsp
    - Chili powder - 1 tsp
    - parsley - 2 tablespoon
    - pepper and salt - dash

Directions

8 Servings

- soak the beans overnight in cold water
- next day -
- put the beans in a pot, cover with water and when the water is boiling, drop the water away
- put fresh water over the beans and add the oil, chopped onion, garlic, mushrooms, pepper, celery, tomatoes, potato and the spices and put it to boil till beans are cooked
- add the fresh parsley at the end
