Introduction

This is a remake of my mother's meatloaf recipe, updating it with healthier ingredients. This is a remake of my mother's meatloaf recipe, updating it with healthier ingredients.

Ingredients

    2 lbs. extra lean ground beef
    1 cup oat bran
    1 tsp. extra virgin olive oil
    1 clove garlic, grated or chopped finely
    1/2 medium onion, chopped finely
    2 stalks celery, chopped finely
    4 tbsp. ketchup
    1/2 cup water

Tips

*Put muffin pan on a cookie sheet in the oven to catch any overflow drippings.


Directions

-Saute onion, garlic, and celery in olive oil until translucent.
-Mix all remaining ingredients together.
-Spray muffin tins with a little bit of cooking spray (not calculated in recipe) or use nonstick muffin pan.
-Divide meat mixture evenly between the muffin holes.
-Bake at 350 degrees Fahrenheit for 30 minutes.
