Introduction

This is a yummy soup on a cold winter day - great way to get your veggies in! This is a yummy soup on a cold winter day - great way to get your veggies in!
Number of Servings: 6

Ingredients

    2 cups chopped celery
    1 cup chopped onion
    1 pkg (10 oz) frozen spinach
    1 1/2 cups water
    1 T McKay's Chicken Seasoning (get in a health food store)
    1 cup cottage cheese (1 %)
    2 cups milk (1%)
    1/2 tsp salt

Directions

Cook celery, onion, spinach, water and chicken seasoning for 10 minutes. Puree in a blender and add the remaining ingredients. When well blended, reheat and serve.

May want to garnish with sour cream.

    this was pretty good, i made it w fat free cottage cheese & light soy milk- so it came down to only 50 calories per serving - 7/20/09
